I barely made it to the grocery store Wednesday after work and in my normal hectic style, I did not manage to cook a turkey. Yep, that bad boy is still hanging out in the freezer. Good thing I wasn't hosting dinner this year, right? I am often known to be bit of a perfectionist when it comes to digging into the details for dinners and parties, but not this year. I somehow managed to be categorized as an absolute slacker this Thanksgiving.
My contribution? The most un-Martha side dishes I could find and lots of vino, baby. This includes a new recipe I tried: 7-up salad. Check it out:
Ingredients
* 2 (3 ounce) boxes lime Jell-O gelatin
* 2 cups boiling water
* 1 12 ounce can 7-Up soda
* 1 (20 ounce) can crushed pineapple, well drained,reserve juice
* 1 cup miniature marshmallow
* 1 cup softened cream cheese
* 1 (8 ounce) container Cool Whip
* 1/2 cup chopped walnuts (optional)
Directions
1. Dissolve Jello in boiling water and make per box directions, refrigerate until set.
2. In a sauce pan on low-med heat, combine 7-up and marshmallows and stir until they melt into a syrup type consistency.
3. Stir in softened cream cheese with a whisk
4. In a 13x9 glass casserole dish, spread crushed pineapple along the bottom.
5. Layer lime jello on top of crushed pineapple.
6. Add the heated marshmallow/cream cheese mixture to pan and refrigerate. (about 3 hrs)
7. For topping: spread whipped cream and sprinkle walnuts on top of mixture.
8. Refrigerate.
